Pumpkin Spice Chex Mix

2 cups Corn Chex Cereal
2 cups Wheat Chex Cereal
2 cups Rice Chex Cereal
1 cup pecans and/or walnuts
1 cup pita chips or pretzels
1 stick of butter
1 package Halladay's Pumpkin Cheesecake Mix

Combine cereals, nuts and chips in a medium bowl. Melt the butter and pour over cereal mixture, stirring as you go. Sprinkle the Pumpkin Cheesecake mix over the mixture and stir gently until well blended. Microwave for 3 minutes, stopping to stir after each minute. Pour onto a cookie sheet to cool. Once cool, store in a sealed bag or container until ready to serve.

2 cups Corn Chex Cereal

1 cup nuts of choice
1 cup pita chips, pretzels or bagel chips, crumbled
stick butter
2 Tbsp. maple syrup
2 Tbsp. Halladay's Maple Bacon Seasoning

Combine cereals, nuts, and pita chips in a medium bowl. Melt butter then add maple syrup and Maple Bacon Seasoning. Pour melted butter mixture over the cereal mix, stirring as you go. Microwave mixture on high for a total of about 3 minutes; pausing to stir after each minute. Pour onto a cookie sheet and let cool. Store in a sealed container until you are ready to serve.

Pumpkin Corn Chowder with Shrimp

Pumpkin Corn Chowder with Shrimp

1 package Halladay's Farmhouse Corn Chowder
3 cups water
3 Tbsp. butter
1 cup half and half or heavy cream
1 tsp. lemon juice
1 cup prepared pumpkin
1 (15 oz.) can of corn, drained
1 cup shrimp, cooked and chopped
1/4 tsp. Old Bay Seasoning
Pinch of cinnamon

In a medium stock pot, combine Corn Chowder Mix and 3 cups of water; simmer for 15-20 minutes. Remove from heat; add butter and let sit for 15-20 minutes. Add the half and half (or heavy cream), lemon juice, prepared pumpkin, corn, shrimp, Old Bay seasoning and cinnamon. Return to heat and simmer for 15 to 20 minutes, or until all flavors are well combined.

Lemon Parmesan Fish

Lemon Parmesan Fish

cup Corn Flakes cereal, crushed
1 Tbsp. Parmesan cheese, grated
1 Tbsp. Halladay's Lemon Spinach Seasoning
1 Tbsp. butter, melted
tsp. pepper
4 (4 oz.) pieces flounder or sole

Preheat oven to 450F. Spray pan with nonstick spray. Combine all ingredients except fish. Sprinkle mixture over fish and bake until fish flakes easily, about 15 minutes.

Pumpkin Mousse Dessert Cups

3 Tbsp. butter
2 Tbsp. sugar
1 cup graham cracker or gingersnaps crumbs
1 (8 oz.) container Cool Whip
1 cup pumpkin, cooked and pureed
1 (8 oz.) block cream cheese, softened
1 package Halladay's Pumpkin Cheesecake

Melt butter in small pan. Add sugar and crumbs; blend well. Spoon into glasses; set aside. Beat cream cheese, pumpkin and cheesecake mix. Fold in Cool Whip and spoon into reserved glasses. Let chill. Garnish with fresh whipped cream and or nuts before serving.
